The Pacific Oyster ‘seed’ is bought in from a hatchery at a young age (measuring approximately 7 x 7 mm) and grown in mesh bags on the estuary until it reaches a size considered ready for consumption. This whole process takes 16-24 Months and involves continuous monitoring, sorting and separating of the oysters. The oysters are finally harvested by Porthilly Shellfish and purified in tanks before they are sold to the public.

Sourcing Premium Oysters

Most years we will sell out of everything we can grow on the Estuary here at Porthilly. The recent addition of a new bio-secure depuration unit means that we can now source Premium Oysters from elsewhere across Europe. This exciting addition allows us to keep a year round supply of quality Oysters that are coming from the right environments at the right time of year. 

New Depuration Unit

Due to ever increasing demand for our produce we have completed a new state of the art depuration unit this year. This unit provides us with the most up to date equipment available to purify our Oysters and get them to market in their best condition!

Gold at the British Oyster Championship 2013!

Porthilly Oysters won Gold in the Pacific (Rock) Oyster Category at The British Oyster Championship 2013, which was held by Boisdale and Wright Brothers (with fine wine sponsor Justerini & Brooks) at Boisdale of Canary Wharf, London on 22 October 2013. The British Oyster Championship attempts to seek out the best Pacific and Native Oysters in Britain, based upon blind taste tests by a panel of expert judges. All oysters were judged on appearance, meat-to-shell ratio, and flavour.
